BORRAJA

The borage is a typical vegetable of Aragon, originally from North Africa. It can be combined with different foods, but it is usually eaten mixed with potato.

It is one of the most characteristic dishes of this area. You can also eat with clams and other foods.

It's a very healthy dish.

HOW CAN WE EAT IT?

 Raw: only the buds and the very raw leaves of the plant, picked even before the flowering takes place, are consumed in the salad.     

 

Cooked: it is not convenient for the borage to cook for a long time since many nutrients are lost. In any case, it is always advisable to ingest the broth in which the borage has been cooked.

 

 

Fresh juice: fresh borage juice is made when the leaves are tender, being used as a depurative.     

 

Borage oil: contains in its composition a component that in the body is transformed into prostaglandins. These substances help control certain pathologies or discomforts:  Hypertension: contains a component that causes the dilation of the arteries facilitating the passage of bloodstream.

 

Hypercholesterolemia: regulates the production of cholesterol.

Premenstrual syndrome: could help regulate the production of estrogen.
